I'm not a huge curry fan myself, but I look forward to seeing it.

Being serious for a second, I've always been interested in learning how to cook something of substance.

you really should mate. there is something very satisfying about cooking something that takes a long time - i.e rather than just steak and chips or whatever.

i know your not one for hot food old man Swanky, but curries dont have to be hot - and if you cook them right, they are more fragrant than just chilli hot most of the time.
cheaper packet mixes and pastes usually substitute some of the other herbs and spices for more chilli, which isn't very tasty at all.
take a vindaloo for instance - HUGE variance between a good one and a bad one. a good one, you wont even taste the chilli that much.

I'm a super fussy, unfortunately not by fault, just born with bland taste buds. I have accepted it though, but I do like to try new things and this certainly intrigues me.

yeah, my point is, a curry doesn't have to be chilli hot to taste nice - its more about the other spices as well

I think most aussies dont eat a curry correctly, its usually just Curry and Rice, the use of heat reducing condiments makes a hot curry more paletable, use Tomato, Cucumber, Watermelon, Banana's, Sultanas, Yoghurt, Popadums etc as side dishes, this adds an additional flavors and interest to a curry.

depends on what type of curry it is.
for indian curries, mango chutney and naan are very good
in thai curries, you typically have lots of coconut milk in them, but in general you dont have much else on the side - sometimes not even rice in the case of a laksa
