Of course but the tipping culture you speak of is derived from the labour standards over here. Base wage is $2+ an hour.
But most hospo staff will earn more than Australian staff based on what they earn for tips. And tips are income that is tracked and taxed.
The retail food and hospitality trade over there is huge and its understandable when your overheads are 1/10th of those in AU and your wages are subsidiaed by customer goodwill that ensures considerable positive customer service.
